Homemade Veggie Nuggets (with 3 Veggies)

Ingredients

1/2 floret of Broccoli, 

1/2 cup og peas

2 eggs,

3 carrots, 

1/4 of squash 

1/2 sweet potatoes

1/s tbsps butter 

A dash of milk or almond milk  

1 tbsps veggie oil or coconut oil 

Season well 

Plain or almond flour if needed, 

How to make it!

Boil or steam broccoli, peas, carrots, squash and sweet potatoes. Mash them all with butter and milk. If you are doing this for a baby who is 9 months plus do not add salt and pepper. Use breast milk or formula milk instead of cow or almond milk. 

Add egg to veggie mash. Depending on the texture add some flour if you need to. Heat the pan with vegetable or coconut oil, take a tbsps of the mixture and fry them both sides until it is golden. 

Cheesy Broccoli and Cauliflower Casserole

Ingredients 

1 whole broccoli 

1 cauliflower 

1 tbsp of butter 

2 tbsp of plain flour 

Chicken broth 

Cream cheese (optional) 

1/2 diced onion 

1-2 garlic minced 

3 tbsp of breadcrumbs 

3 tbsp of parmesan cheese grated

Salt and pepper to taste

How to make it!

Steam or boil the broccoli and cauliflower for 3-4 minutes and set aside. Put the butter in a saucepan, add onion and garlic and cook them for a few minutes. Add flour and cook them for a few minutes, then add chicken broth and cook them for 5 minutes. If you wish, you can add cream cheese in it. Season with salt and pepper. 

Meanwhile mix breadcrumb and parmesan cheese in another bowl and set aside. 

Layer half the broccoli and cauliflower in a small casserole dish. Pour on half of the cream sauce, then sprinkle on breadcrumb and parmesan cheese. Bake in a 375°F oven until the cheese is melted and bubbly and the breadcrumbs are golden brown, 25 to 30 minutes. Serve warm.

Alternatives: If you do not have parmesan you can use cheddar instead. 

If you are making it for your baby younger than 12 months, do not add salt and pepper. 

Hummus 

Ingredients

1 can (400g / 14oz) cooked chickpeas [retain the liquid from the can]

3 tbsp extra virgin olive oil

1 tbsp lemon juice

1 tsp tahini

1 garlic clove, crushed

How to make it! 

Put all the ingredients except the olive oil in a blender and blitz until smooth. Drizzle in the oil a little at a time until and continue to blend until it has all combined.

If the hummus seems to be too thick add a little of the retained chickpea liquid from the can.

Serve with carrots, cucumber, peppers, celery and sugar snap peas.
